I can not believe March 3rd is already here. Where has the time gone? It feels like it's just flown by me without skipping a beat. Linus' birthday will be here before I know it. I am so excited about it. My friend Elayne said that I am the only mother she has met that gets very excited about a child's birthday party. Well, when you waited almost 7 years after getting married to have one, I hope you are excited about them. I'm not excited about my baby growing up but I love having conversations with him. He fascinated me. Yesterday we made daddy banana cream pie for dessert. Linus loved making it. Except he wasn't very good at keeping the vanilla wafers in the pie dish like he was suppose to. He kept taking them out and eating them. The goofy boy. He even helped me make daddy's dinner. It was called a layered taco bake or something. It had torn up corn tortilla pieces on the bottom, a can or chili beans, more corn tortilla pieces, 1 more can of chili beans, enchilada sauce and monterey jack cheese and green onion on the top. I served it with tomato's, lettuce and sour cream. I thought it was very yummy. My husband has been a vegeterian for almost 2 years and cooking for him is hard but his mom got him a vegeterian cook book last year for Christmas so cooking is alot easier now. His favorite thing to eat is black bean burgers. They are easy to make to but I must admit, I have never tried one yet. I'm a chicken.
This weekend, I am going to try something else out of that cookbook. Cooking for him on weekends is alot easier than during the week cuz when he gets home the same time I do, he is starving and its usually something quick like black bean burgers. Plus, Linus gets to help make daddy something and that makes his day.
What are you eating for lunch/dinner tonight? No clue in our home. Something good though. ( :
